Honey Wheat Muffins (Rotation Recipe)

This is a great way to introduce wheat into your family's diet.  The honey makes these muffins so sweet that any child will want to eat them right up.  They are a quick and easy replacement to whole wheat dinner rolls!

Honey Wheat Muffins
1 c. flour
1/2 c. whole wheat flour
2 t. baking powder
1/2 t. sea salt
1 egg
1/2 c. honey
1/2 c. milk
1/4 c. vegetable oil
In a large bowl, combine flours, baking powder, and salt.  In another bowl, beat egg, honey, milk, and oil; stir into dry ingredients just until moistened.  Fill greased muffin cups 3/4 full.  Bake at 375 degrees for 18-20 minutes or until muffins test done.  Cool in pan for 10 minutes before removing to a wire rack.  Yield:  6-8 muffins
